Y’all know I love a fast food copycat, so let’s give Taco Bell a run for their money. This is like Nachos BellGrande on steroids, yet 1/3 of the points and calories! I posted this on my stories last night but wanted to post it here so I could save it for future inspo. I can’t tell you how many times I throw some things together and it turns out incredible, then I forget about it for like 6 months. I’ve already saved this one to my menu planning inspo folder, so hopefully future Geri remembers to make this like every week.
So it’s basically an amalgamation of 2-3 different recipes from my blog, all married together in food heaven. The star is the Skinny Queso. GIRL, you have no right being that good and only 2 SP for 1/4 cup.
The meat is the meat/seasoning combo from my Crispy Baked Tacos. You could use 94/6 ground beef, turkey, or meatless crumbles. That’s 1 SP for 1/4 cup cooked. Top with lost of chopped tomato and green onions. Yum!
If you like beans, use my Easy Refried Beans recipe but use black beans and don’t mash them. Jeff added those to his nachos. 0 SP on purple and blue or however many points depending on how many you use on green. You could also add sour cream.
Tortilla chips are usually 4 SP for 1 ounce. Use whatever brand you like.
My plate came out to 7 SP, and I was FULL. If you got the TB original, that would set you back 23 points! This is so much more worth it, and I don’t feel like crap. You can still eat what you crave, y’all!
