We’re coming up on the 1-year anniversary of these Green Chili Enchiladas making their blog debut. Reading the beginning of this blog post brings back so many memories of uncertainty and anxiety as we first headed into the pandemic, completely blind. I was trying to find ways to make use of pantry staples and think my way around less access to fresh produce.

There are many lessons to be learned from the past year, but one I will take away is that food is a privilege. And the ability to make food that you absolutely love is a luxury. This humble but delicious recipe will always remind me of that. It’s a pantry-and-kitchen-sink meal but still tastes heavenly. Sooo inexpensive as well.

4 SP for each enchilada on Blue/Purple, and 5 SP per enchilada on Green. These are HUGE, so just one or two with a salad is perfect.
