Penne alla Vodka is probably my favorite creamy pasta dish, and that means A LOT coming from your resident creamy sauce connoisseur! πŸ˜‰

It’s the perfect vegetarian main dish, but the recipe includes plenty of sauce to accommodate the addition of whatever protein you like–shrimp, chicken, pork, etc.

The vodka truly does bring out a whole next level of flavor from the tomatoes, but you could use stock if you don’t like having alcohol around. Maybe even add a splash of vinegar to mimic the acid of the wine.

Probably the best part for me? The leftovers are even BETTER. Have you ever tried to heat up full-fat creamy sauces the next day? They separate into a pool of oil. Gross. But not these leftovers! Just as creamy and even more delicious heated up.

Recipe link in bio –> litecravings, or google “lite cravings penne vodka.” It will pop right up!

  2. Oh man looks so good as do all your recipes! Now I just have to actually make some of them πŸ˜‚

  3. Like your queso, this one reheats magically. I’m usually doing microwave defrost shenanigans to not end up with separation but yours πŸ‘Œ

  4. Love this recipe!! This specific dish gets kudos and clean plates from the pickiest eaters… my children 😍😍

  5. The GOAT!!! πŸ”₯πŸ”₯πŸ”₯ I should probably add this to next week’s menu!

  6. Totally agree! This recipe is a family favorite. I add cooked crumbled turkey sausage and it’s almost an exact replica of a delicious high calorie, high fat recipe at our favorite Charlotte Italian restaurant. My husband can’t tell the difference. ❀️

  7. I love a recipe with good β€˜2 day value’ I like to call it πŸ˜† can’t wait to try this 🀩

  8. I made this last week and I LOVE it! And…unbelievably so did my husband and son…two of the pickiest people I know! It’s in the rotation at my house!

  9. Made this tonight and it was awesome! We added shrimp and have plenty for leftovers. Thank you! πŸ”₯

  10. Does anyone know the points without the penne? I was going to make it with spaghetti squash ❀️
