Penne alla Vodka is probably my favorite creamy pasta dish, and that means A LOT coming from your resident creamy sauce connoisseur! 😉
It’s the perfect vegetarian main dish, but the recipe includes plenty of sauce to accommodate the addition of whatever protein you like–shrimp, chicken, pork, etc.
The vodka truly does bring out a whole next level of flavor from the tomatoes, but you could use stock if you don’t like having alcohol around. Maybe even add a splash of vinegar to mimic the acid of the wine.
Probably the best part for me? The leftovers are even BETTER. Have you ever tried to heat up full-fat creamy sauces the next day? They separate into a pool of oil. Gross. But not these leftovers! Just as creamy and even more delicious heated up.
