Mexican Street Corn Pasta Salad is a mashup of two of my favorite BBQ side dishes! Creamy, sweet, tangy, cheesy, spicy… all of the flavor notes! You can make it ahead or eat it right away.⁣

The best part, for me, is the points bang for your serving-size buck. 2/3 a cup is just 6 SP on Green, 4 SP on Blue, or 2 SP on Purple. That’s incredible for a decadent pasta salad!⁣

This really is fantastic when you use freshly grilled corn, but I’ve also made it with Trader Joe’s frozen grilled corn, thawed and drained. It’s a great shortcut if you need to save some time in the kicthen!⁣
