Made this Polenta soup with Kale and Parmesan for this week’s hosted by cookinglikeimeanit from Cookish, the newest Milk Street Cookbook ! Thank you voraciousbooks for this gifted book 💛 This was a creamy and homey treat. Perfect for a cold day and the polenta really gave it a wonderful thick texture. I used my favorite local by amphoranueva and that little drizzle on top at the end was perfection. Amphora’s olive oils actually have a ton of flavor and was first recommended to me by a chef in a cooking class and I have never looked back 💛
