Made Spiced Butternut Squash Soup for this week’s hosted by cookinglikeimeanit from Milk Street: Fast and Slow which has recipes you can use in the instantpotofficial ! Thank you voraciousbooks for this gifted book 💛 This is a delicious soup that’s perfect for fall! It makes a lot though and my family doesn’t love butternut squash so I’ll be digging into the leftovers solo. I used red curry powder which gave it a deeper color but it was delicious. I didn’t have any pepitas on hand but I think naan croutons might be a fun addition! The yogurt is a MUST in my opinion (may have added a BIG dollop!) Perfect creamy compliment to the spiced soup. 💛
