I’ve been wanting to put this Spiced Turkey and Butternut Squash Skillet with Goat Cheese into my repertoire again! You know I’m all about those ground turkey skillets. Think of this one as the fall-themed, less-spicy sibling to Firecracker Ground Turkey. Warm spices and tangy goat cheese, along with that sweet squash?! *chef’s kiss*⁣

This one takes about 30 minutes total, especially if you buy your butternut squash pre-cut. It’s a complete meal, full of spinach or whatever other leafy green you want to add. ⁣

It’s also low carb (5 net carbs per serving), high protein (31 g), and low cal (210). 2 SP for a huge 1 1/3 cup serving on Purple and Blue, or 3 SP on Green. I like to plan for this one when I know I have a higher point day or two in my week.

  1. Hands down, one of my favorite meals! I usually mix in some cauliflower or brown rice to make a little grain bowl situation. Perfect for dinner or meal prepped for lunches!

  2. Could you make this with shrimp- My friend loves butter not squash and goat cheese but she doesn’t eat meat!

  3. My fave. Though I usually make the meat with all the spices and just add on top of a microwaved/baked sweet potato with the goat cheese on top. So good!

  4. Ooo, the first thing I thought of upon seeing this was sage, which goes so nicely with turkey and with squash and with goat cheese. I may have to make a breakfast version with a sage turkey sausage I usually have on hand… 🤤

  5. Have used both regular feta and Trader Joe’s fat free feta when I did not have goat cheese in this dish and it tasted pretty good! Also oven roasted the butternut squash first and did not add the water! Such a delicious recipe! Thanks Geri for sharing all of your wonderful recipe ideas with all of us!

  7. This is a family favourite and makes a regular appearance at our house. I often make it for lunches for the week for my husband and I as well. He swears he could eat it every day.

  8. I made this for dinner tonight and my family loved it! The only change I made was to sub in reduced fat feta for the goat cheese because that’s what I had on hand. I’ll definitely be making it again!

  9. Made this tonight! It was SO good with a glass of Pinot Noir. I don’t normally use butternut squash but this made it so incredibly easy. I ended up adding in about 2x more of each seasoning (not salt) and swapped the water with vegetable broth (just a tip for those who are Indian like me and like dishes overly seasoned 😝)
