I’m head-over-heals in love with this Baked Eggplant Parmesan. I never thought I’d see that day when I’d proclaim my love of eggplant, but here we are! I can’t think of a better meal than this one. 2 pieces of the eggplant parm + 1 cup of cooked spaghetti + however much you want of the quick marinara is 10 WW SP on Green and Blue, or 5 SP on Purple if you use whole wheat pasta. That’s the breakdown for everything you see here! And only 140 cals for the eggplant slices!
