I feel like we don’t talk enough about *weekend* meal prep. I just finished prepping these Chicken Lettuce Wraps (like PF CHANG’S but better!) because I know I have a busy Fri-Sun ahead of me.
It’s so easy to fall into those weekend vibes and tell myself that I did well with my food all week, so I deserve to indulge. That’s fine, but then one indulgent meal turns into an indulgent day of eating, and then the next day I’m like “well, one more day won’t hurt” and then it’s suddenly Monday and I’ve erased all of the hard work from the previous week. It’s a vicious cycle.
So I will have these delicious lettuce wraps to grab from my fridge instead! 2/3 cup of the meat mixture is 2 SP on Blue and Purple, and 4 SP on Green. Sometimes I’ll chop up the lettuce and eat it like a salad, or I’ll place the lettuce and chicken in one of my favorite Trader Joe’s tortilla for a hearty on-the-go wrap for only 8 SP (on Green)!
