Happy Sunday! I’m brightening up this dreary morning with Bacon, Egg, and Potato Hash. I’m normally not a morning or a breakfast person, but something about winter Sundays makes me crave a cozy breakfast by the fireplace with a cup of coffee. So that’s where I’m headed!
This is a one-pan meal that couldn’t be easier, and you probably have the ingredients on hand right now. When you’re done cooking, cut the hash into four equal portions. I have one and Jeff has two, then I save the last one. Tomorrow, I’ll reheat it in my air fryer for a few minutes and then wrap it in a tortilla for a quick breakfast burrito. Extra cheese, of course!
FOR THE HASH
SP on Purple: 3
SP on Blue: 5
SP on Green: 7
Serve with a side of sliced fruit, and you’re good to go!
