This is the time of year when I need a crock pot recipe once a week. I’m in the middle of the semester, spending crazy hours grading and conferencing with students. I’m even conferring with a few students tomorrow. If you told me last year I’d be meeting with students through Zoom on a Saturday, I’d say you’re crazy. These are the times, right?
Anyway, I knew I needed something simple and bulky for the weekend, with lots of leftovers to keep me nourished while working. This one totally hits the spot!
I love this served over mashed potatoes and roasted green beans or brussels sprouts. I’ve been meaning to try themuchomama Jane’s brussels hash, so I think I’ll make that with the leftovers later in the week.
