2 huge perks to making Pumpkin Cream Cheese Muffins at home:

1. You can have them year round, rather than for just a few-month window.

And now that it’s technically not pumpkin season, I can actually find canned pumpkin on the shelves! My goodness, it was a struggle for a while there.

I’m making these tomorrow for a weekend treat and then having leftovers for my breakfasts all week, with a side of fruit. I’m struggling to figure out the rest of my food for the week.   3. I made these and loved them. They are so much better cold like you suggest. Only issue I have is getting the cream cheese mixture in them without making a huge mess and they look terrible, not cute like yours…any tips on how to make them look better?

  4. Ok, just made these, they are in the oven now. Question: is the filling supposed to be a liquid? I couldn’t fill the muffins with the entire filling. I made the filling twice thinking I did something wrong, both times it was a liquid, it was a mess. Not making these again.
